This exceptional Mountain tea is very smooth and deep with mild pine and oak fire. Freshly plucked tea is withered over wood fires and then rolled by hand. These rolled leaves are then pressed into wooden barrels, covered with cloth and allowed to ferment. The leaves are then re rolled into tight strips and placed in bamboo baskets which are hung over burning pine boughs, where they further dry and develop their unique robust and aromatic characteristics. Best served hot, but a few of our customers tell us not to rule out icing it and serving sweetened...try it and let us know what you think.
